Chunky Minestrone Style Stew

Where the heck did this snow come from?! Come on Mother Nature, it’s APRIL. We aren’t supposed to be having snow! Sorry about that, I’m honestly feeling a little salty about all of this snow still on the ground. I was looking at my Timehop, and there were pictures of sunshine, skirts, and flowers… warm weather, where are youuu? Because of this strange cold weather, my body was craving a super warming and comforting bowl of stew, so I whipped up this variation on Minestrone soup. If I have a colder breakfast or meal for lunch, I find that I am freezing immediately following eating, does this happen to anyone else? This stew was my cure for the shivers this week.

I cannot believe it has been a year since I began my Instagram  account @TheBalancedRose, originally @Roseinthe_Kitchen! Happy 1st birthday! Woohooo! (Sorry, I am just super excited!) Turmeric Spiced Overnight Chia Oats

TRUE LIFE: I am obsessed with turmeric- I think that should be an episode. I love turmeric and all of its amazing anti-inflammatory properties. This wonderful golden spice does wonders for our bodies at the cellular level as well as our bodies as a whole. As I discussed a few posts back, turmeric’s main active ingredient is curcumin, which contributes to the amazing effects turmeric has on the body. It contains high levels of manganese, iron, vitamin B6, fiber, copper, and potassium, and is a quite strong but extremely safe anti-inflammatory.

Lentil, Quinoa, and Chickpea Stew

Being a college student, I am constantly on-the-go, running from the gym to class to my internship, meals in tote in recycled take-out containers or in plastic bags. I basically always have two things on my person, my camelbak water bottle, and my lunch box. Oh and we can’t forget about the fact that, because I am a college student buying my own groceries, the budget is quite tight. Meals need to be relatively cheap and quick, which I have been much better at this semester! *Patting myself on the back*

Superfood PIPcorn Balls

I have a confession to make; I LOVE sweets. I have a huge sweet tooth and sometimes it gets me in trouble (i.e. too many cookies, pieces of dark chocolate, or brownies- or is it too many?). Something about popcorn, chocolate, and caramel reminds me of going to the movies with my parents as a little kid. Sitting there in the seat, so excited for the lights to dim and the picture to start, while munching on overly buttered and salted popcorn and chocolaty sweet bites of whatever candy I begged my parents to buy me. Oh, good times.

Turmeric Spiced Porridge

Before I get started on how amazing and delicious this bowl of goodness tastes, let’s talk about turmeric. “What is turmeric?” You may ask. Turmeric is a golden spice which comes from the root of the Curcuma longa plant that is native to southeast India. It has a warm but bitter, and peppery flavor with a mild fragrance almost like orange and ginger. It is traditionally used in a great deal of Indian cuisine and is behind the bright yellow color of mustard.

Zoats: Two Ways

This can certainly sound strange if you have never heard of zoats before. Zoats are a delicious way of sneakily adding veggies into your breakfast when you crave a warming bowl of porridge. Zoats are also a great low carbohydrate & high protein option because they are made up of egg whites, zucchini, and a small amount of rolled oats, along with some other ingredients.

The “Classic” Blueberry Banana Smoothie

In high school I got really into making smoothies. I had a “classic” smoothie I would always make which I still remember to this day: 1 cup water, 1 banana, 1/2 cup berries, & 1 cup spinach. It was always very tasty but I never knew anything about all of wonderful ways you could make a smoothie! This smoothie is probably my new “classic” smoothie, super simple, very nourishing, and absolutely delicious.

The “Huge Salad Bowl” Salad
