I have a confession to make: I have a MAJOR sweet tooth. If I crave foods, it’s almost always a dessert of some sort, probably consisting of something chocolaty and rich. I’ve never been a candy person, but oh boy put a bar of chocolate in front of me and game over. For example, when I was growing up at my family’s summer cottage, we frequently had things like moon pies and ring dings around because my grandfather also had a major sweet tooth. My mom would let us have one occasionally but when she wasn’t looking, like any mischievous kid, I would grab two more and savor them in private. Sounds super strange, but kids do the darnedest things!
Nowadays, I opt to keep foods in my pantry that satisfy my sweet tooth, but also contain lots of healthful ingredients. This protein powder by Equip Foods has been a life saver lately in all of my smoothies as well as when I am craving something decadent and chocolaty. I also love the fact that it has only 3 ingredients: grass-fed beef protein, cocoa powder, & stevia. I went on a kick of having a lot of fruit free smoothies and Equip’s prime protein was what made them sweet, creamy, and absolutely delicious sans fruit. Because my schedule is ramping up and a lot of us are back to our routines and busy schedules, this cookie recipe comes in handy. Not only is it refined sugar free and gluten free, its full of collagen from the protein powder as well as Equip’s collagen peptides. Collagen is a protein in our bodies, specifically in our hair, skin, nails, joints & soft tissues and it can be incorporated in our diets to give those parts of our bodies some extra support. These cookies are also full of fiber from the oats and banana, as well as healthy fats from peanut butter. The mixture of fiber, carbs, fats, and protein in these cookies is enough to get your engine going for a quick grab-a-couple-cookies-&-go-breakfast, as well as keep your engine going and satisfy that sweet tooth as a mid-day snack. They’re also super tasty, so that’s a plus!
Chocolate Peanut Butter Cookies
- 1.5 ripe banana (213 g)
- 2 cups quick oats
- 1 scoop Equip Prime Protein Chocolate
- 1 scoop Equip Complete Collagen
- 1 heaping tsp raw cacao cocoa powder is also fine
- 1 tsp cinnamon
- 1/2 tsp baking powder
- 1/2 cup creamy peanut butter
- 1/2 tsp salt
Preheat oven to 350 degrees F.
Add dry ingredients to a bowl and mix to distribute evenly.
Mash banana, then stir peanut butter into mashed banana.
Pour wet mixture into dry ingredients. Using a spatula or wooden spoon, mix until no dry ingredients are left in the bottom of the bowl.
Line a cookie sheet with parchment paper or lightly oil a cookie sheet.
Using a 1/4 c measuring cup, scoop out batter and place it on cookie sheet, flattening and forming into your desired cookie shape. Repeat for all cookies.
When finished, lick spoon because there aren't any raw eggs to worry about!
Depending on the strength of your oven, bake for about 10-12 minutes, checking every 5. Using a toothpick, insert and if it comes out wet, they need more time.
Once done, remove from sheet, place on cooling rack, allow to cool, then dig in!
Any add in's could be great in this recipe, included but not limited to: dried fruit, shredded coconut, chocolate chips, & whole nuts.
