Summer is winding down and labor day has passed, meaning that its time for a lot of us to go back to school. The beginning of a new school year always had a similar feeling to me as the beginning of a new year. It’s a fresh start with lots to look forward to, so many new things to learn, and new experiences to be had. Today I began the second year of my masters in nutrition and also found out I was accepted to my university’s coordinated program in dietetics. This program, unlike a general masters in nutrition, satisfies the dietetic requirements to eventually sit for the registered dietitian exam, which is ultimately my end goal. Exciting things happening over here!
With a new semester and a busy schedule comes a more deliberate attitude toward my meals and a great deal more preparation. I often pack lots of lunches and various meals throughout the week depending on my schedule, and am always in in need of snacks to munch on between or even during classes. Snacks that actually keep me full throughout my busy day of running to and from class, going to CrossFit, and having enough brain power to get school work done are typically full of healthy fats, protein, and not loaded with sugar. Sugar tends to make my energy levels dip and skyrocket, and nobody wants that when there’s a busy day ahead. These Turmeric Collagen Bliss Balls are packed with satiating and satisfying healthy fats from almonds as well as lots of protein from plant sources as well as collagen, which is amazing for your hair, skin, nails, gut, and joints! These balls are also loaded with turmeric, an amazing spice that can help reduce inflammation. They don’t have any added sugars due to the fact that I made them with organic stevia, but they can definitely be made with honey or maple syrup. They’re great as a snack or grab a few for a quick breakfast on the go!
Turmeric Collagen Bliss Balls
- 1 Cup Almond pulp Leftover from making almond milk
- 3/4 Cup Almond butter
- 1 Heaping tsp Turmeric
- 1 Tsp Cinnamon
- 1/2 Tsp Vanilla extract
- 4 Heaping scoops Natural citizen organic protein
- 2 Scoops Equip Foods collagen peptides
- 2 Scoops MRM vanilla bean protein
- 2 Tbsp Ground flax seed
- Dash Ground black pepper
- Stevia to taste Optional, but if a sweeter bliss ball is desired honey or maple syrup could be used, just omit a tbsp or two of almond butter
- 1/4 Cup Shredded unsweetened coconut Reserve for coating
- 1/8 Tsp Himalayan pink salt Reserve for coating
Combine dry ingredients in a small bowl and whisk together until well combined.
Add almond pulp, vanilla extract, and almond butter to food processor and pulse to combine slightly.
Add in dry ingredients and process until well combined. This may require removal of the lid and scraping down of the sides a few times until the mixture seems well combined.
Once bliss ball batter comes together, scoop mixture out with a tbsp so all balls are uniformly the same size and roll it between your hands to form a ball. Once all the balls are rolled, combine the shredded coconut and pink salt on a plate or flat surface and roll the balls to coat evenly.
Store in fridge for up to two weeks!
